The closed restaurants thing is the worst! Especially in an international airport -- why do you presume to know what time I'm on and when I need to eat? I once landed at JFK while flying from Greece to Portland, it was morning in my brain and I wanted eggs so badly but it was 4pm in New York (maybe?) and that wasn't an option...but the weird Irish pub in the corner made me some, though I had to bring my own coffee from Starbucks.
Also, flights land and depart at all hours! It's eminently reasonable that someone will want a bite to eat before their late/early flight! I don't think this is part of the staffing issues going on right now, I think it's an all the time problem.

The porter terminal in toronto has some really good breakfast options at 5:30!
